Rice Crispy Treats and Strawberry Shortcake Cupcakes

I was on call this week therefore I have to bring treats to work tomorrow.  Every time I try to top what I brought last time...in an attempt to get my co-workers to see how wonderful vegan food is.  I borrowed the Strawberry Cupcake recipe from a local vegan blogger who is amazing.  These get a Vegan Gal rating of 8!

Check out her blog:

Also made rice crispy bars with chocolate on top.  I give them a Vegan Gal rating of 7.  These are really good, but very rich.

Ingredients:

1 cup Karo white corn syrup

1 cup white sugar

1 cup peanut butter

6 cups rice crispy cereal

Put corn syrup and sugar into a large saucepan on medium-high heat. Let boil. Add peanut butter and stir until melted. Take off of heat and add rice crispy cereal. Pour into a prepared pan and press down.  Pour melted chocolate over the top. Let cool then cut.

Vegan Quiche

Egg Replacer Quiche

Ingredients:
1 cup cheddar Daiya
3 1/3 tablespoons Ener-G egg replacer
1/2 cup unsweetened almond milk
unbaked vegan pie crust
additional ingredients such as spinach, mushrooms, peppers, tomatoes, onions, etc.

The recipe is on the egg replacer box:
Preheat oven to 375 degrees.  Place Daiya over entire bottom of pie shell.  Place other fillings over cheese (after sauteing the onions, mushrooms, etc. in olive oil). Thoroughly mix egg replacer and almond milk together until smooth.  Pour over other filling ingredients in the pie shell.  Bake until crust is golden brown. Reheat in the oven to enjoy later if you want!

I gave this a Tofu Gal rating of 6.  It's great served warm with extra tomato on top!

The Vegan What, Where and Why

I saw a really great post earlier on a site I was visiting and I thought I'd share it.

"The word 'veganism' denotes a philosophy and way of living which seeks to end the idea of animals as property and exclude all forms of intentional exploitation of, use of, and cruelty to, animals for food, clothing, research or any other purpose; and by extension, promotes the development and use of animal-free alternatives for the benefit of animals, including people and the environment.
In dietary terms it denotes the practice of dispensing with all products derived wholly or partly from animals."

This should give you the info to help start off veganism a lot easier:

Here is a list of animal ingredients to avoid:

More things to avoid:

1. Animals as clothes: Leather, skins, furs, wool, silk, down, feathers...

2. Animals as entertainment:  Circuses, rodeos, zoos, aquariums, animal fights, animal races, hunting...

3. Companies that DO NOT test on animals(however CHECK INGREDIENTS they only verify testing not ingredients): http://www.leapingbunny.org/indexcus.php
